That\u2019s why we were so eager this month to present the Quayside Hotel &amp; Bar in the market town of Boston.<\/p>\n<p>It offers a unique, exciting dining experience that matches &#8211; and in many cases, surpasses &#8211; the country pubs in Lincolnshire, but in a completely new and different way.<\/p>\n<p>Couple Lana &amp; Alistair Arundell bought the venue last year and renovated it from its derelict state into the modern chic bar and restaurant it is today in just three months with the help of a 26-strong team. Quayside officially opened in\u2008December last year.<\/p>\n<p>\u201cWe wanted to create something different, something unique,\u201d says Lana. \u201cWe wanted it to be cosy yet modern, and somewhere that we would want to go to and relax with our friends.\u201d<\/p>\n<p>When the Quayside opened in December, it only offered a hotel, bar and breakfast service but Lana says it was always their intention to develop the kitchen into a restaurant too.<\/p>\n<p>\u201cInitially, we only offered breakfast, but we couldn\u2019t decide on the type of cuisine to offer or who the chef would be to head up the kitchen. That is until we met Kanchana and discovered her delicious Thai food!\u201d<\/p>\n<p>Kanchana has worked in Thai restaurants all her life and lived in Thailand for a lot of her life too.\u2008After Kanchana cooked for them, Lana &amp; Alistair knew in an instant that they wanted to serve Thai cuisine.<\/p>\n<p>Kanchana is keen on creating an authentic Thai experience and only uses ingredients that are imported from her home country. The restaurant opened in March this year.<\/p>\n<p>\u201cIt has been fantastic,\u201d says Lana. \u201cThe hotel is booked up almost every night, the bar is getting busy at the weekends, we\u2019re hosting live music events and everyone enjoys the restaurant and Kanchana\u2019s cooking.\u201d<\/p>\n<p>On my visit, I\u2008enjoyed satay chicken and spring rolls to start followed by Kanchana\u2019s signature Pad Thai and Thai green curry. For dessert I tried the peculiar but really delicious banana fritters.<\/p>\n<p>\u201cI wanted to make the menu typically Thai,\u201d says Kanchana. \u201cI\u2019ve included dishes from my country that the customers will automatically recognise as Thai dishes, and it\u2019s proving to be really popular.\u201d<\/p>\n<p>Aside from the Thai cuisine, the Quayside\u2019s other uniqueness is its bar. Not only is it complete with marble top, strip lighting, firelit corners and upholstered comfy seating areas, it offers an exceptional selection of drinks.<\/p>\n<p>There are around 90 different gins alone for you to try, and the cocktail menu is extensive. Lana looks after the bar and has been on a number of cocktail making courses to perfect this area of the business, while Alistair works on the hotel rooms due to his extensive experience in property development.<\/p>\n<p>The hard work they\u2019ve put into it is paying off, and that\u2019s already been recognised by the\u00a0 Channel 4 show \u2018Four in a Bed,\u2019 a TV competition for B&amp;B owners. They asked for Quayside to be a part of a show that airs in October and Lana &amp; Alistair came first, offering the best hotel and dining experience out of all of the contestants.<\/p>\n<p>\u201cWe were delighted to win, especially considering we\u2019re still very new and our fellow contestants had years of experience in running their venues.\u201d<\/p>\n<p>It\u2019s certainly an exciting time for the couple and for Lincolnshire too, gaining such a beautiful, modern and delicious dining room.
